I should have been clearer in my request. I'm not asking about teaching ethnography. I'm asking if anyone knows of research on the topic of face mask protocol and communication around it in the service industry.

An "ethnography of communication focusing on mask talk" sounds like an interesting study! Is the ethnographic study part of a coursework? Ethnography requires the Researcher to be a participant-observer as "Ethnographic research is a qualitative method where researchers observe and/or interact with a study's participants in their real-life environment" (Ethnography: When and How to Use, 2013, p. 1).
So, perhaps, the first thing that the student should identify is which environment is he/she can do the participant observation. If the student works as an employer or as a barista part-time, then the student may do an ethnographic study in his/her place of work. If not, the student may consider doing participant-observation study in school or the community where he or she interacts with the study's participants/subjects.
The next consideration is the time frame within which the ethnographic study must be finished. What's the time frame of study for your student? Should the study be completed within the semester (4-5 month period) or is it going to be an undergraduate thesis?
